50g butter
1 tbsp golden syrup
1 egg
½ cup brown sugar
1 cup flour
1 tsp baking powder
2 tsp powdered ginger
1 tsp mixed spice
1 tsp baking soda
¾ cup milk
Alison’s Pantry Crystallised Ginger (for topping)
Icing
Cream cheese
Butter
Icing sugar
Vanilla

Preheat oven to 190°C and line a loaf tin.

Melt butter and golden syrup, then mix in egg and sugar.

Add dry ingredients, then stir in milk with baking soda.

Bake for 30-40 minutes.

Once cooled, ice and finish with crystallised ginger.
